Using freshed Salmon, outer layer half cooked, leaving the inner with raw layer topping with small slice of  cheese and fish roes. 

Preserved Ginger

I liked the sliced ginger which the preserved flavour is not too strong nour sour.

Even though using fresh raw fish, after mixing the ingredients together with rice,

this dish seem lack of something. For me, my comment for the Chirashi Jyu was average.
